Sushi Cake: Fun, Easy and Delicious!

Sushi cake is not a cake that is made to have the appearance of sushi, instead, sushi cake is very similar to sushi stacks, where a regular sushi’s ingredients are used and stacked together to create this one big sushi for multiple people. Sushi cake is a great choice for a party, where everyone can get a small slice of this yummy sushi. Often times, the sushi would be nicely decorated on the top layer with all kind of ingredients. With all kind of ingredients, a sushi cake is often colorful.

It is hard to say where the sushi cake came from. Unlike some other creative sushi that we have talked about, there is a very similar kind of sushi in Japan. In Japan, the Chirashizushi, or directly translated, scatter sushi is very similar to a sushi cake.

Chirashizushi is a common dish in Japan. People of all ages love this dish due to their simplicity and deliciousness. In fact, you can easily find this dish in many Japanese restaurants and many many Japanese families would make this dish for special occasions. It is simple and doesn’t require much skill sushi that anyone can make. There are two main types of chirashizushi; the Edomae Chirashi and the Barazushi. Edomae Chirashi is now commonly known as the Kaizen Don which is a seafood bowl, where there is an assortment of sashimi layered on top of sushi rice. While Barazushi is more of a common dish for the Japanese family, where the sushi rice is scattered and mixed with cooked bamboo, lotus roots, shiitake, Japanese fried egg, and abura-age. Depending on the family and the area they live in there is a variety of ingredients that Japanese people would incorporate into the dish.

Sushi Cake Recipe

Now you know all the wonderful things about sushi cake, let’s make one!
As mentioned, sushi cake is extremely easy to make.

Tools:
Rice cooker, cake mold, frying pan, plastic wrap

Ingredients

  • Sushi Rice (1 cup Japanese Sushi Rice, 10g sugar, 20ml rice vinegar, 5g salt)
  • 1 cup Shrimps
  • 50g Sushi grade Salmon sliced
  • 1~2 tbsp Salmon Roe
  • 1 Sliced Cucumbers
  • 1 Sliced Avocados
  • 2 Eggs
  • Sriracha Sauce (optional)
  • Salt
  • Furikake of your choice

Making Sushi cake

  1. First, make sushi rice with your rice cooker. Once done, mix with rice vinegar, sugar, and salt, and then let it cool. Check out this article for a more detailed sushi rice recipe that pro like Jiro uses.
  2. Prepare your fried egg crepe. Mix your eggs and then season with a bit of salt. Gently fry it under low heat to create a nice thin layer of egg crepes. Once done, roll up the egg crepe and slice them into thin strips.
  3. Slice raw salmon into thin slices
  4. Boil the shrimps and then remove all shells and tails.
  5. When Sushi rice is cooled, separate into halves, take one half and then mix in furikake. This will create different colors and more flavors to the rice.
  6. Get your cake mold out and wrap the sides with plastic wrap for easy removal later
  7. Layer on a generous amount of furikake mixed rice at the bottom, then press gently to create a shape.
  8. Cover that with slices of avocados and then on top of that add shrimps and some sriracha sauce
  9. Layer on top the second layer of regular sushi rice and again gently press down the rice, make sure it is all firm.
  10. Gently remove the sushi cake from the cake mold and then place on a plate.
  11. Take four slices of salmon and layer it and then twist it into a flower, repeat and make multiple salmon flowers. Place these salmon flowers all over the top sushi rice layer.
  12. Next to each salmon flower, place 2~3 slices of cucumbers like leaves to the flower.
  13. Fill up the empty space with sliced fried egg crepes.
  14. Top up the salmon flower with some salmon roe and extra shrimps for extra decor.
  15. Now you have a beautiful sushi cake!
