1 cup sushi rice
1 cup water
1 tablespoon of rice vinegar
1 teaspoon of sugar
½ teaspoon of salt

Rinse the sushi rice 6 to 7 times.
Soak the sushi rice in cold water for 30 minutes and then drain the sushi rice.
Pour in the rice and one cup of water into the rice cooker and start.
Prepare the vinegar sauce. Mix sugar, rice vinegar, and salt together.
Once cooked, mix in the vinegar sauce while the rice is still hot. Use cutting and flipping techniques, be careful not to smoosh the rice.
Leave to cool down. Once it is room temperature, sushi rice is done!

Ingredients

Cooked sushi rice
2 Sheets of seaweed (Nori)
8 Ounce sushi-grade raw fish: Tuna, Salmon, or Hamachi (Yellowtail)
1 Sliced Avocado
Few Slices of Lettuce
1 Sliced Cucumber
1 Takuan (Pickled daikon) Cut into long sticks
Chopped Chives
½ cup Soy Sauce
Wasabi (optional)
1 Tablespoon Sesame Oil
1 Tablespoon Rice Vinegar
Lemon Juice
Roasted Sesame (optional)
1 ½ tablespoon Mayo (optional)

Instructions

  1. Dice the fish and move them into a bowl. Then marinate the fish you like the most with some soy sauce, sesame oil, rice vinegar, lemon juice. Mix them well and then sprinkle on chopped chives.
  2. Take out your bamboo rolling mat and lay 1 sheet of nori with the smooth side downwards.
  3. Spread sushi rice evenly across the nori with a little bit of empty space on the top.
  4. Sprinkle roasted sesame on top of the rice.
  5. Mix Mayo with wasabi and then spread evenly over the rice.
  6. Layer the lettuce, cucumber, takuan, and sliced avocado on top the rice.
  7. Drain the diced fish and then spread it evenly across the veggies
  8. Time to wrap! Fold in the bottom of the sushi and then press down to tuck in. The bamboo mat helps distribute the pressure.
  9. Attach the second nori, use a bit of water to remaining nori and then continue to roll and tuck into a cylindrical shape.

Ingredients

Cooked sushi rice

1 Chicken Breast
¼ Diced plum tomatoes
1 Ripe Avocado
1 Onion
1 Sliced Bell pepper
1 Sliced Lettuce
1 diced Jalapenos
Habanero pepper (optional)
1 tablespoon Chili Sauce or Sriracha
Mayo (optional)
Lemon Juice
Dice Cilantro (optional)
Salt
Pepper
Olive Oil

Instructions

  1. Salt and Pepper chicken breast with very little olive oil and then heat up a pan.
  2. Sear the chicken breast, make sure it is cooked through. Once done, slice into long pieces. You can add some habanero pepper if you really want it spicy.
  3. Make guacamole by mashing the avocado, then mixing in plum tomatoes, jalapenos if wanted, some salt and a splash of lemon juice
  4. Slice onion into thin slices
  5. Take out your bamboo rolling mat and lay 1 sheet of nori with the smooth side downwards.
  6. Spread sushi rice evenly across the nori with a little bit of empty space on the top.
  7. Mix Mayo with Sriracha and then spread evenly over the rice.
  8. Layer the lettuce, bell pepper, onions and then guacamole
  9. Place the seared chicken breast on top of the veggies
  10. Add some cilantro if you want
  11. Fold in the bottom of the sushi and then press down to tuck in.
  12. Attach the second nori, use a bit of water and then continue to roll and tuck into a cylindrical shape.

Olive oil

Instructions

  1. Heat up a frying pan with some olive oil
  2. Cover the drained firm tofu with corn starch and then gently place into the frying pan. Fry until all sides are golden brown and take it out drain the excess oil.
  3. While cooling the tofu, sprinkle some salt and cayenne pepper.
  4. Take out your bamboo rolling mat and lay 1 sheet of nori with the smooth side downwards and attach the second nori with water
  5. Spread sushi rice evenly across one nori
  6. Spread mayo and then sprinkled some sesame on top of the rice
  7. Layer sliced avocado, asparagus, cucumber, carrots, and mango.
  8. Place the fried tofu on top
  9. Wrap from the bottom of the sushi and then press down to tuck in.
