Vegan Sushi Recipe #1: Unagi Rolls

Vegan sushi recipe number 1, we got the vegan dragon roll! The typical dragon roll consisted of BBQ unagi (eel) on the top, for our vegan sushi recipe we are replacing the unagi with eggplant! The eggplant can have a very similar texture to the eel once cooked and properly seasoned. So let’s try this vegan sushi recipe!

This vegan sushi recipe might take a little longer, but the result is absolutely amazing and definitely worth it.

Ingredients

For Eggplant’s Sauce:
¾ cup of soy sauce
¾ cup of mirin
½ cup of sugar
¼ cup of sake

For sushi:
Sushi rice
2 large Asian eggplant
2 sheets of nori
1 sliced avocado
1 box of firm tofu
1 cucumber julienned
Vegan mayonnaise
Sriracha (optional)
Vegetable Oil (Your choice)
Salt
Pepper

Creating Vegan Unagi

  1. Preheat oven to 375 degree Farhenheit or 190 degrees Celcius
  2. Boil mirin and sake in a small pot then add in sugar
  3. Stir until dissolved and then add in soy sauce continue stirring until boil
  4. Once done, store to be cooled, if sealed properly can store up to 2 weeks
  5. Clean and slice the eggplant length-wise
  6. Lay on parchment paper and marinate both sides of the eggplant
  7. Roast for 10~15 minutes and flip side and coat on more sauce and then roast for another 10 minutes
  8. Eggplant should be soft in the middle and caramelize on the sides
  9. The vegan unagi is done!

Instructions to vegan dragon sushi recipe

  1. Cut the firm tofu into around 1cm width and height strips
  2. Heat up a frying pan with some oil
  3. Fry the tofu strips until golden and sprinkle salt
  4. Take out your sushi mat and layer a ceramic wrap too
  5. Lay 1 sheet of nori with the shiny side down and then evenly spread rice all over the nori
  6. Flip the nori with the rice down on ceramic wrap
  7. Place a slice of eggplant on the nori and then avocado slices and cucumbers and fried tofu
  8. Drizzle on some eggplant sauce and the roll up the sushi
  9. Press the sushi together while rolling it
  10. Once done rolling, you would have rice on the outside of sushi, unwrap the ceramic wrap and place one slice of eggplant on top of the rice
  11. Wrap the ceramic wrap up again and gently press the eggplant against the rice to stick
  12. Dab cold water onto your knife and cut through the ceramic wrap and sushi roll into the 8 pieces.
  13. Finally, remove the ceramic wrap and drizzle on more eggplant sauce and some mayo or a mixture of vegan mayonnaise and sriracha
  14. Repeat the steps to make more sushi rolls. And you are done!

This vegan sushi recipe is a bit longer and takes some time to make, however, this vegan sushi recipe is definitely worth it. With the sweet and savory eggplant, crispy tofu and the creamy avocado, this vegan sushi recipe is an experience. With the unagi like eggplant, you can even make it into a vegan nigiri. If you want less hassle, you can replace the fried tofu with other ingredients you like.

Vegan Sushi Recipe #2: Spicy Dynamite Sushi roll

This vegan sushi recipe is for those of you that like something spicy! This vegan sushi recipe might also take some extra work because you got to fry the king oyster mushroom to create this chewy and crunchy texture. But this vegan sushi recipe will definitely pack a punch and make you wanting more.

Ingredients

Diced Kimchi
Sushi Rice
2 sheets of nori
Julienned carrots
1 sliced avocado
2~3 King Oyster Mushroom
All-purpose flour
Salt
Pepper
Cayenne
Chili Powder (optional)
Vegan Mayonnaise
Sriracha
Garlic Powder
Vegetable Oil (Your choice)

Let’s make some vegan sushi!

  1. Wash and dice king oyster mushroom
  2. Mix all-purpose flour, garlic powder, salt, pepper, cayenne, and chili powder together
  3. Even coat the sliced king oyster mushroom with the mixture
  4. Heat up a frying pan with oil
  5. Fry the mushroom until they turn golden and then drain the excess oil
  6. Take out the sushi mat and then place 1 nori on top
  7. Evenly spread sushi rice over leaving ¼ of the nori empty
  8. Place sliced avocado, carrots, and kimchi on the rice
  9. Gently lift up the bottom of the sushi and then roll up the sushi
  10. Once rolled and cut into 8 pieces with a damp knife, drizzle a mixture of mayonnaise and sriracha all over the sushi

This vegan sushi recipe is going to be a go-to for those that like spicy food. In fact, you can even add more spice into the vegan sushi recipe. The best thing about it is that you can easily alter and manipulate to your preference. And the texture of the fried king oyster mushroom and kimchi just give this vegan sushi recipe an extra twist.

Vegan Sushi Recipe #3: Sweet Potato sushi recipe

The last vegan sushi recipe! This vegan sushi recipe is a rather simple and relaxing vegan sushi recipe. In fact, this vegan sushi recipe is a great option for children too.

Ingredients

Sushi rice
2 sheets of nori
1 Large Sweet potato
Skinned cucumber julienned
Roasted sesame
Sesame oil
Olive oil
Maple Syrup/Honey
Salt

Making sushi!

  1. Preheat oven to 375 (190 C)
  2. Wash and cut sweet potato into long strips with skin
  3. Mix 1 tbsp Maple Syrus, 1 tsp sesame oil, 1 tbsp olive oil and then coated onto the sweet potato strips
  4. Bake the sweet potato strips for 25 minutes and flip during the halfway
  5. Lay 1 sheet of nori on top of the bamboo mat, evenly spread sushi rice over the nori with ¼ space empty on the top
  6. Sprinkle roasted sesame over the rice and the place cucumber and the sweet potato strips
  7. Roll up the sushi, gently tucking it in while applying pressure to the sushi
  8. Repeat step 6 to 8 until you have enough sushi rolls
  9. Cut with a wet knife and you are done!

This vegan sushi recipe is truly a very simple recipe. The extra sweet potatoes can become caramelized sweet potato fries. You can eat the vegan sushi alone or if you want some extra flavor to add a splash of soy sauce and wasabi.
